Easy Veggie and Chicken Skewers

Serves 4

Time 30 minutes

Ingredients

2 chicken breasts, cut into bite sized pieces

2 chicken stock cubes, crushed

2 garlic cloves, minced

1 tbsp lemon juice

Extra virgin olive oil

1 red onion, cut into wedges

1 punnet cherry tomatoes

Zucchini, cut into thick rounds

Method

In a bowl marinate the chicken in olive oil, crushed stock cubes, lemon juice and minced garlic. 

Prepare vegetables and carefully skewer chicken, onion, tomato, and zucchini onto skewers in an alternating manner.

When done, warm a skillet and when at medium heat, add olive oil then add the skewers, rotating to ensure all sides of the chicken and vegetables are browned.

Add an extra squeeze of lemon juice whilst cooking.

When cooked through remove from heat and serve.
