Mango and Coconut Sago Puddings

Serves 4

Time 15 minutes

Ingredients

1 cup sago (tapioca pearls)

2 mangoes, diced – reserve some to serve

1 small can of condensed milk

½ cup coconut yoghurt

Muesli or coconut flakes, to serve

Method

In a pot bring water to boil (you need more than you think for these – 6 cups of water for 1 cup of tapioca) and add tapioca pearls - cook until they are translucent which takes around 10 minutes depending on the size of the pearl; make sure you mix these very often to ensure they don’t stick to the bottom. Remove the cooked tapioca from heat and drain.

In a blender put 1 of the diced mangos, ¼ cup condensed milk, ¼ cup coconut milk, blitz together. 

Combine the pearls with the blended mango mixture and then spoon into little jars and fill halfway. 

At the halfway point place a drizzle of coconut yoghurt and top with more tapioca pearl mixture then top with mango and muesli or coconut flakes.
