Chicken Mole

Serves 4

Time 50 minutes

Ingredients

1.4kg chicken, cut into 4 pieces 

1 tbsp extra virgin olive oil

1 brown onion, chopped

4 cloves garlic, roughly chopped 

2 jalapeno, chopped

1 dried ancho chilli, chopped

1 tbsp garlic powder

1 tbsp sesame seeds

1 tsp dried chilli flakes 

1 tsp Mexican oregano

2 cups mole paste

100g dark chocolate, at least 70% 

1½ cup chicken stock

Salt and pepper

To Garnish

Coriander, roughly chopped

Method

Preheat oven to 180°C.

Season the chicken with salt and pepper. Heat a pan and add olive oil, cook the chicken skin side down until the skin is golden brown. Move the chicken into a dish.

In the same pan, add the onion, garlic, jalapeno, ancho, and season with salk and pepper. Sauté for 1 minute until the chilli and onion have softened. Add the garlic powder, sesame, chilli flakes, and oregano and stir to combine. 

Add the mole paste, chocolate and stock then cook until the chocolate is melted.

Pour the mole mixture into the dish over the chicken.

Bake for 40 minutes.

Garnish with chopped coriander and serve.
