Brik Pastry Fetta Crispies

Ingredients
180g feta
½ onion, sliced
2 potatoes, cut into pieces and boiled
250g spinach
4 eggs
Oil, for frying
Brik pastry
Salt
Method
Heat a pan on medium heat. Add onion, potato and spinach into the pan and cook until caramelised.
Once the spinach mixture has cooled, crumble the feta into the mixture and combine. Set aside.
Preheat the oil in a pan for shallow frying.
Fold the edges of a brik pastry and place 1-2 teaspoons of spinach and feta mixture in the centre. Crack an egg on the mixture, then fold the pastry together.
Hold and gently place the pastry into the oil. Pinch the side to seal the pastry with a spatula, then spoon some frying oil on top. Fry until both sides are golden brown.
Drain off the oil and season with salt. Allow the pastry to cool.
