Apple & Olive Oil Cake
Serves make 1 cake
Time 45 minutes plus cooling for 10 minutes
Ingredients
1¼ cup extra virgin olive oil
3 cups plain flour, sifted
¼ cup brown sugar
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground ginger
3 large eggs
1 cup honey
3 Granny Smith apples, peeled and cored, cut into pieces
Icing sugar, topping
Mint, to garnish
Gelato, to serve
Method
Preheat your oven to 180°C fan forced.
Line a cake tin with baking paper. Sift the flour and baking powder into a large bowl.
Add eggs, extra virgin olive oil, brown sugar, honey, cinnamon and ginger. Stir to combine. Pour the mixture into the cake tin and smooth evenly, add the apple on top.
Bake for 35-40 minutes or until it’s cooked through.
Allow it to cool for 10 minutes. Top with icing sugar and serve with gelato and mint.
