Vegan Coconut Panna Cotta

Serves 4

Time 20 minutes + setting time

Ingredients

1 packet jel-it-in (8 grams)
1 cup cold water
125ml cup almond milk
½ cup maple syrup
400ml coconut milk
1 tsp vanilla extract

Method

In a bowl stir jel-it-into cold water and let sit for 10 minutes.
In a saucepan gently heat almond milk, maple syrup, coconut milk and jel-it-in mixture.
When the milk mixture is just starting to warm, steam should begin to rise but do not boil, remove the saucepan from the heat.
Stir in vanilla extract.
Place the moulds on a small tray and pour about ½ cup of the mixture evenly into each mould.
Allow to cool and then cover with cling film.
Place in the fridge for a minimum of 4 hours, or ideally overnight to set.
