Tuscan Salad with Kumato Tomatoes

Serves 2-4

Time 5 minutes

Ingredients

6 kumato tomatoes, quartered

2 sweet peppers, seed remove, cut into little pieces

¼ cup sun-dried tomatoes, diced

⅓ cup Kalamata olives

⅓ cup green olives

⅓ cup stuffed olives

3 anchovies, diced

3 tbsp pine nuts

1 baby lettuce, diced

Handful of basil, leaves only

Handful of parsley, chopped

2 tbsp balsamic vinegar

4 tbsp extra virgin olive oil

Salt and pepper

1 sourdough toast, diced

Method

In a large bowl, mix kumato tomatoes, sweet peppers, olives, sun-dried tomatoes, anchovies, pine nuts, lettuce, basil and parsley together.

Drizzle olive oil and balsamic vinegar on top. 

Season with salt and pepper.

Add the sourdough toast and mix again. Serve.
