Tropical Pineapple & Mango Muffins

Serves Makes approximately 24 muffins

Time 30 minutes

Ingredients

400g frozen mango

400g frozen pineapple

Icing sugar, to serve

For the Batter

½ cup frozen mango

½ cup frozen pineapple

2 cups self-raising flour

1 cup shredded coconut

3 eggs

1 cup unsalted butter, softened to room temperature

1 tsp baking powder

1 cup caster sugar

2 tsp vanilla extract

Method

Preheat the oven to 180ºC.

Into a food processor, place self raising flour, eggs, shredded coconut, butter, sugar, frozen mango, frozen pineapple and vanilla extract. Process all the ingredients in the mixer until smooth.

Remove the batter from the mixer then gently fold in a handful of the frozen mango and pineapple pieces. Stir the pieces through the mixture evenly.

Using 2 x 12 muffin baking trays, line them with muffin patty cases to then scoop th mixture into muffin cup. Top with an additional piece of frozen mango or pineapple.

Bake them for 25 minutes or until cooked through.

Allow the muffins to cool down.

Sprinkle with icing sugar and serve.
