Thai Massaman Beef Burger

Ingredients

For the Beef Patties

500g beef mince (80/20 lean-to-fat ratio)

2 tbsp Massaman curry paste

1 tsp fish sauce

1 tsp soy sauce

½ tsp ground coriander

Pinch of salt and freshly ground black pepper

For the Peanut Sauce

100ml coconut milk

2 tbsp smooth peanut butter

1 tbsp Massaman curry paste

1 tsp palm sugar or brown sugar

1 tsp fish sauce

1 lime, juiced

For the Toppings

4 burger buns, toasted

1 red onion, thinly sliced and fried until crisp

1 cucumber, thinly sliced

Fresh coriander leaves

Fresh Thai basil leaves

Roasted peanuts, crushed

Method

In a large mixing bowl, combine the beef mince, Massaman curry paste, fish sauce, soy sauce, ground coriander, salt, and pepper. Mix until just combined, being careful not to overwork the mixture. Shape into 4 evenly sized patties and chill in the refrigerator for 15 minutes to firm up.

To prepare the peanut sauce, heat the coconut milk in a small saucepan over medium heat. Stir in the peanut butter, Massaman curry paste, sugar, fish sauce, and lime juice. Simmer gently, stirring often, until the sauce thickens slightly. Remove from the heat and set aside.

Preheat a grill pan or barbecue to medium-high heat. Brush the beef patties lightly with oil and grill for 4-5 minutes on each side, or until cooked to your desired doneness. Let the patties rest for a few minutes.

Assemble the burgers by spreading a layer of cucumber slices followed by peanut sauce on the bottom half of each bun. Place the beef patty on top, followed by crispy onions, fresh coriander, Thai basil leaves, and a sprinkle of crushed peanuts. Spread more peanut sauce on the top bun and sandwich everything together.
