Serves 2-4

Ingredients

3 tbsp extra virgin olive oil

3 potatoes, diced

1 brown onion, diced

8-9 eggs, whisked

Parsley, to garnish

Salt and pepper

Method

In a non-stick pan fry off the potatoes in olive oil first until golden.

Add onion and brown. Drain off any excess oil.

Place potatoes at the bottom of the pan and arrange in a single layer.

Pour the eggs into the pan, ensure the egg fills all gaps.

Cook for another 5 minutes.

Sprinkle with parsley and serve!
