Simple Orange Cake

Serves make 1 cake

Time 1 hour 20 minutes

Ingredients

2 large oranges, cooked

6 eggs, beaten

100g self-raising flour

200g ground almonds

250g brown sugar

2 tbsp orange blossom water

1 tsp baking powder

½ cup butter, melted

Ice cream, to serve

Method

Boil the oranges in water in a covered saucepan for up to two hours.

Allow to cool. 

Preheat the oven to 180°C and line a springform tin with baking paper.

In a food processor, add all ingredients and blitz until smooth. Pour the batter into the tin.

Bake for 1 hour to 1 hour 15 minutes or until the cake is cooked through. 

Serve with ice cream.
