Silverbeet with Prosciutto & White Beans

Serves 4

Time 30 minutes

Ingredients

Extra virgin olive oil

½ cup of chopped prosciutto 

1 cup brown onion, diced

2 garlic cloves, minced

½ tsp dried chilli flakes

¾ cup white wine

3 cans of cannellini beans, rinsed and drained

1 chicken stock cube, mixed with 1L of water

Zest and juice of 1 lemon

1 bunch of silverbeet, cleaned, stems removed and chopped

Parmesan cheese, to serve

Fresh bread, to serve

Method

In a pot warm 3 tablespoons of olive oil.

Brown the onion in the oil then add prosciutto and combine.

After 2 minutes add garlic and silverbeet to the pot and wilt for 3-4 minutes.

Then add wine and bring to gentle simmer. After 2 minutes add all the beans, lemon zest and juice, chilli flakes and the chicken stock and simmer everything for 15-20 minutes.

Season with salt and pepper as desired.

Serve in a large bowl with dipping bread.
