Rosie’s Pecan and Coconut Granola
Serves 6-8
Time 30 minutes
Ingredients
2 cups oats
½ cup pecans, chopped
½ cup dried apricots, chopped
½ cup unsweetened coconut flakes
2 tsp cinnamon powder
½ tsp salt
2 tbsp coconut oil, melted
1 tbsp vanilla extract
1/4 cup maple syrup
1/3 cup almond butter
To serve
Milk of your choice
Seasonal fruit
Greek yoghurt
Method
Preheat oven to 150°C.
Line a large baking tray with baking paper.
In a big bowl mix your dry ingredients which include your oats, pecans, apricots, coconut flakes, cinnamon and salt.
Add your wet ingredients: coconut oil, vanilla extract, maple syrup and almond butter.
Empty granola onto baking tray and spread out.
Bake for 10-15 minutes and then mix ingredients and bake for a further 10 minutes.
Serve with milk, Greek yoghurt, and seasonal fruit.
