Oysters 3 Ways
Serves 6-8

Ingredients
2 dozen oysters
Lime and lemon wedges
Ponzu Dressing
1 tbsp low-salt soy sauce
2 tbsp lemon juice
1 tbsp mirin
1 tsp rice vinegar
1 tbsp water
2 tsp bonito flakes
Mignonette
2 shallots, finely diced
2 tbsp white vinegar
2 tbsp red vinegar
Pinch of caster sugar
Pinch of salt
G and T
2 tbsp gin
2 tbsp tonic water
¼ cucumber, finely chopped after all seeds removed
Juice of ½ lime
Method
For all three dressings, combine all ingredients in a small bowl.
To serve prepare the oysters on a large tray, fill the oysters with different dressings and place lime wedges in between.
