Nutritious Baked Mac & Cheese

Serves 6

Time 1 hour

Ingredients

1 cauliflower, cut into small florets

1 zucchini, grated, fluid squeezed out

300g macaroni

1 brown onion, finely chopped

2 garlic cloves, finely chopped

¼ cup plain flour

2½ cups of low-fat milk 

200g cheddar cheese, grated

1 tsp chicken stock powder

Flat leaf parsley, to serve 

Extra virgin olive oil 

Salt and pepper

Method

Preheat the oven to 200°C.

On an oven tray place the cauliflower chunks and drizzle with olive oil, salt and pepper and combine well then place in the oven for 25 minutes so it is golden.

Cook the pasta according to packet instructions.

Warm a pan with olive oil and brown onion and garlic then add the flour and milk and stir to create a thick paste. Once the sauce is simmering season with stock powder and pepper.

Simmer for 4-5 minutes, remove off the heat then stir through the grated cheese so it gently melts and the grated zucchini.

Combine the macaroni with the sauce and place this into a baking dish.

Remove the cauliflower from the oven and nestle this in the pasta – ensure you coat the cauliflower in the sauce and pasta.

Sprinkle some extra cheese over the top and place in the oven for 20 minutes or until top is golden.

Sprinkle with parsley to serve!!
