Mexican Pork Burger
Serves make 4 burgers

Ingredients
Patty
500g of minced pork
2 garlic cloves, grated
1 bunch chive, finely sliced
1 tbsp smoked paprika
1 tsp cayenne powder
½ tsp dried oregano
¼ tsp ground cumin
1 tsp salt
Relish
¼ cup of mayonnaise
1 tsp pickled relish
1 tsp cayenne pepper
1 tsp red wine vinegar
1 tsp dijon mustard
1 bunch dill, finely chopped
6 jalapeños, roughly chopped
3 gherkins, roughly chopped
½ red onion, diced
2 pickled onions, diced
1 tsp tequila
Juice of 1 lime
3 tbsp tomato ketchup
To Serve
4 burger buns
Manchego cheese
1-2 tomatoes, thinly sliced
Lettuce, finely sliced
Extra virgin olive oil
Method
For the patties, mix all patty ingredients in a bowl and combine well. Evenly divide the mixture into 3 or 4 balls, slap in hands for a couple of times then flatten the ball.
Heat a frying pan on medium-high heat, then add the patties. Drizzle olive oil around.
Cook on each side until golden brown and cooked through.
Meanwhile, combine all relish ingredients in a bowl and mix around.
To make the burger, combine the bottom bun, 1 patty with cheese, 1 teaspoon of relish, 1 tomato slice, another teaspoon of relish, a handful of lettuce and place the lid on top.
