Hemp and Beetroot Burger

Serves 2

Time 20-30 minutes

Ingredients

⅓ cup hemp seeds

⅔ cup sunflower seeds
2 beetroots, grated

1 bunch fresh parsley, roughly chopped

½ tsp cumin

1 tbsp nutritional yeast

1 pinch salt

1 pinch pepper

¼ red onion

1 tbsp coconut cream

 

¼ cup hemp seeds
¼ cup sunflower seeds

¼ cup oatmeal

2 drizzles of extra virgin olive oil

 

To serve

1 spoon of sauerkraut

1 pinch fresh parsley

1 tsp beetroot relish

Method

Blend hemp seeds and sunflower seeds to a rough meal. Grate beetroots and add it to the food processor with the parsley, cumin, salt, pepper, coconut cream, a drizzle of extra virgin olive oil and nutritional yeast and blend together.

Next, add in the sunflower seeds, oats and hemp seeds and blend.

Place mixture in a mixing bowl, mix with a spoon and shape into patties. You can place in the fridge to firm before cooking.

Fry in drizzle of olive oil until both sides are golden and cooked through.

Serve in a large lettuce cup with beetroot relish and sauerkraut.
