Healthy(ish) Kataifi Baklava

Ingredients
375g kataifi pastry
30g almonds
20g walnuts
½ tsp ground cinnamon
¼ tsp ground cloves
½ cup sourdough breadcrumbs
150g butter melted
Syrup
½ cup date syrup
½ tsp rose water
½ cup water
Garnish (optional)
Crushed pistachios
Dried rose petals
Method
Preheat the oven to 180°C.
Add walnuts, almonds, ground cinnamon, ground cloves and breadcrumbs in a blender. Blend until nuts look coarsely chopped.
Take a few shreds of the pastry together and create a long strip. Place it on your working surface. Sprinkle the dough with some butter. Take a tablespoon of the filling and add right at the end. Roll the pastry tightly together until you reach the other end of the strip.
Line a pan with baking paper. Place the kataifi baklava on the tray.
Bake for about 15-20 minutes or until crispy and golden.
In a saucepan heat water, rose water and date syrup.
Pour hot syrup over the kataifi. Garnish with pistachios and rose petals.
