Grilled Lamb Chops
Serves 6
Time 15 minutes plus marinating overnight (if possible)
Ingredients
12 lamb chops
2 garlic cloves, minced
1 tbsp rosemary, chopped
Juice of 1 lemon
¼ cup avocado oil
Salt and pepper, to taste
Bed of rocket or baby spinach, to serve
Method
In a tray place the lamb chops and add the rosemary, garlic, lemon juice and olive oil. Ensure lamb chops are turned over to ensure they are fully coated. Marinate overnight, if possible, in the fridge.
Bring a grill pan to medium heat and cook for 3-4 minutes on each side depending on how you like your meat cooked.
Throw the chops on a platter with baby spinach or rocket underneath and serve!
