Greek Inspired Chicken Tray Bake

Serves 4-6

Time 40 minutes

Ingredients

6 chicken thighs, skin off

Juice of 1 lemon

1 red onion, cut into wedges

1 red capsicum, cut into strips

1 zucchini, sliced into rounds

2 sweet potatoes, cut into wedges

1 cup olives, pitted

1 punnet cherry tomatoes

2 tbsp vegetable stock powder

Fresh oregano

Flat leaf parsley, topping

1 block of fetta, to serve

Extra virgin olive oil

Pepper

Method

Preheat the oven to 180°C.

Prepare an oven tray by lining with baking paper and place chicken thighs in the tray and nestle the red onion wedges, capsicum strips, zucchini rounds, olives, sweet potato and tomatoes throughout.

Generously drizzle extra virgin olive oil, lemon juice, oregano over the tray ingredients and ensure all ingredients are coated. Season with stock powder and pepper.

Place in the oven for 35 minutes until chicken is cooked through.

To serve, place the tray bake in the centre of the table and sprinkle over crumbled fetta and flat leaf parsley on top.
