Fried Italian Doughnuts
Serves makes approx. 20 doughnuts
Time 30 minutes
Ingredients
½ cup water
½ cup full cream milk
150gm unsalted butter
1 tsp vanilla bean paste
¼ cup brown sugar
¼ tsp salt
1 cup plain flour
4 large eggs, room temperature
Oil for frying
1 tsp ground cinnamon
¼ cup icing sugar, to dust
Method
Add butter, water, vanilla, brown sugar, salt and milk to a saucepan over medium heat, simmer for 1 minute.
Add the flour and stir until it comes together as a dough. Remove from the heat and stir for 3 to 4 minutes to cool down the dough.
Add the eggs, one at a time, fully incorporating through the batter before adding the next egg. The dough should be smooth and shiny.
Heat your frying oil to 130°C.
Add a tablespoon of dough to the oil, fry for 6 to 8 minutes or until golden brown.
Drain for a few minutes.
Dust with icing sugar and cinnamon to serve.
