Coconut and Strawberry Balls

Serves 4-6

Time 10 minutes + 1 hour forming

Ingredients

Cup of strawberries, chopped in half and stalk removed and some extras from the punnet reserved for serving

¼ cup of coconut oil – ensure solid and not melted

¼ cup of coconut flour

½ cup shredded coconut

2 tbsp maple syrup

Method

This is easy – in a blender throw in the strawberries and other ingredients. Blitz until smooth.

Scoop out the mixture with an ice cream scoop and place it on a tray lined with baking paper. 

Place in the fridge for 1 hour or until firm

Serve on a platter with chopped strawberries and fresh mint leaves
