Blueberry Parfaits
Serves 6-8
Time 5 minutes
Ingredients
400g Greek-style yoghurt
200g cream cheese
¼ cup coconut sugar
2 tbsp honey
2 cups frozen blueberries
2 cups granola
2 tbsp macadamias, chopped
½ bunch of mint, to garnish
Method
Mix yoghurt, cream cheese, honey and coconut sugar in a bowl.
Fold the blueberries through the mixture.
Build in glasses, alternating layers between blueberry yoghurt mixture and granola. Top with granola and serve with mint and macadamias.
